Oh Mamma Mia, how I LOVE food!! Here are some of the foods I've cooked up and can already get out there to just show you HOW YUMMY healthy food can be! Let's take a walk, yep, you guessed it, just one foot after the other. :)
A low carb lunch: 1 oz cilantro lime shrimp, 1 oz fresh mozzarella whips, some zesty guacamole and steamed, seasoned veggies (6 smartpoints)
FLAVOR FAVE: McCormick Perfect Pinch Vegetable Seasoning (must. have. in. your. seasoning cabinet. Like, as of, yesterday)
Dinner: This was a deliciously seasoned (and homemade) venison burger patty, with cabbage slaw, pan steamed veggies, with a hearty garden side salad (3 smartpoints) [I made a STUFFED version of the venison burger that had mozzarella cheese, broccoli, and salsa..absolutely DELISH...and only worth 5 smartpoints]
Lunch: Got the marinara and broccoli idea from Heidi Powell but I used FLAVOR FAVE: Prego SmartLight Traditional Spaghetti (2sp for 1/2 c) sauce instead. So we've got that on freshly steamed broccoli, with mini cucumbers and cabbage, some delicious guacamole, and a Pesto Lime Cod fillet from Costco (7 smartpoints)
A staple breakfast: EGG SANDWICH!! 1 FLAVOR FAVE: Bubba's Lite English Muffin, with 1 egg, 1 oz mozzarella part-skim cheese and 97% fat free brown sugar thin sliced ham deli meat (6 smartpoints) I switch out the meat often and even switch up a whole egg for 3 egg whites (Yes, egg whites can be totally delicious and great sources of protein...trust me)
Lunch: Another lunch staple...Rotisserie chicken all white meat, again from Costco. A weight watcher member suggested this and I. AM. IN. LOVE! I have 3 oz of rotisserie chicken, with 1 oz mozzarella cheese melted on top, and freshly steamed green beans and sweet peppers (seasoned with Ms. Dash Original Seasoning) (5 smartpoints)
Another sweet tooth satisfier: I am in LOVE with FLAVOR FAVE: Quest Bars. They are so high in protein and pretty darn delicious. I've tried TONS, and these are BY FAR the best tasting protein bars I can find. I also don't get the knotted up stomach that usually comes when I ingest whey proteins and things. Not with these babies. My good friend, M&M tells me quite often how obsessed she is with these things and how they have curbed her love for chocolate. Live it up, M&M, live it up. This is a sliced banana with a Chocolate Milk Shake bar cut up in chunks (4 smartpoints).
That's a tool you'll want to start utilizing...Making your food into MEALS. Savoring the meals as slowly as you can because you'll find more satisfaction that way. Trust me, it will be so much better when you take the time! And I'm talking MAYBE 5 extra minutes, maybe.
A high carb meal: Pesto Lime Cod fillet wrapped in butter lettuce with 1/2 c garlic brown rice and quinoa (also found at Costco) (8 smartpoints)
THIS IS A FAMILY WINNER! My younger sister, Cookie, as well as my husband, and SON! have asked for this meal again! This is a high carb meal. We've got a mixed green salad, seasoned (Trader Joe's 21 Seasoning Salute...another MUST HAVE AS OF YESTERDAY seasoning) and steamed cauliflower, parmesan crusted sweet potatoes, and that good ol' rotisserie chicken with salsa poured on top and rewarmed in the oven! (4 smartpoints!!)
A simple lunch that needed to be fast to make and fast to eat: Leftover roasted spaghetti squash and Starkist Sweet and Spicy Tuna creations sandwich sliders. (6 smartpoints)
This has become a recent favorite of mine: Romaine lettuce, 1 oz cilantro lime shrimp, 2 T goat cheese, and as much salsa as I want... 3 smartpoints...that's right, only 3!!
FLAVOR FAVE: Peanut Butter Chocolate Shake (Find recipe on blog post: Sweet Success!) with one simply salted hard-boiled egg. I sliced the egg to make it last longer and to remind myself to take more time! So yummy! 6 smartpoints for this simple meal!
And these foods give me so much satisfaction and SO MUCH ENERGY...I get excited to eat every 3 hours pretty much as soon as I wake up. Oh my gosh, food is so good.
Yep, it's fuel, but it doesn't have to taste like it!
Mangiamo,
Camille
